Recipes Tried & True: Loaded Baked Potato Dip

Loaded Baked Potato Dip

Original Recipe from Kraft with a few modifications!!!

Every thing you need for this delicious appetizer or side dish:
     1 cup instant potatoe flakes
     1 cup milk
     8 oz creme cheese (I use fat free)
     16 oz sour cream ( I use fat free)
     8 oz bag of shredded cheese ( I use colby jack)
     2.8 oz bag of real bacon bits
     1 package of hidden valley ranch dip or dressing mix  (3 tbsp)
     4 green onions
     1 bag of Ritz toasted chip crackers (original)

Easy Prep:  Preheat oven to 350*

•      Mix potatoe flakes with milk in large bowl, let stand for 5 min
•      Chop green onions while waiting.       
•      Combine sourcream with ranch dip mix.  Blend well.
•      Add softened cream cheese and sourcream to potatoes.

•      Stir in shredded cheese, bacon bits and green onions (saving a little of each )
•      Spoon into large casserole dish or two  9" pie plates. (I spray mine with pam)

 

     I always make two, one for my family and one for my mom & dad!!
     Everybody LOVES this!!

•      Top with remaining cheese, bacon bits & green onions.  
•      Bake 15-20 min. until cheese is melted and warmed through. 
•      Serve with crackers as an appetizer and it also makes a great side dish!!

  

     

Separated at Birth

My stepdad, Jerry found this piece of furniture in Chicago at a flea market in 1998. It has been in my mom's house since 2001 and we are especially fond of it.

We were never quite sure what to call it. A mantle? A few weeks ago my mom and I were out shopping at estate sales in Kansas City. We came across this beauty.

My mom almost passed it up. In fact, we didn't even buy it the day we found it. This buffet was only $125. I begged her to spilt it with me and find a place to store it until I had a house of my own. Sunday, my mom had doubts about not buying it. So she called Ms. Betty to see if the buffet was still available. Luckly, it was and the price had gone down. It was now only $100. Needless to say, we went back. Who would of thought this would be the finished product...... Separated at birth.

A work in progress

So, I have decided to let my mom in on this little shindig of a blog. We are trying to figure out how to make our blog beautiful. Stay tuned!.

First Post. EEEK

I have decided that it is time for me to start blogging about anything and everything. I have always wanted to have a blog, I just never had the time to do it. Now I do. This blog is probably going to be really random but it's for me. To help me keep track of all the interesting or not so interesting things that go on in this spicy life of mine. Follow or don't. I hope to inspire at least one person. So, lets get this blog started on the right foot. My mom and I are obsessed with going to estate sales. Every Saturday we map the sales out on mapquest, grab a coffee and hit the road to find the best treasures there are. Old and Used! A couple weeks ago we were doing the usual. We came across a couple old ugly candle sticks and a hot tray thing. We had a vision, thanks to www.pinterest.com These two old items were about to become an awesome center piece for my table in my room. Let the magic begin.

I sanded the two down so that the paint would have something to stick to. My stepdad had to help me with the next part. attaching the candle stick to the hot plate. He screwed the two together.

Ahh, the next two steps werepretty simple- prime and spray paint light blue.

It turned out perfect and looks amazing on my table runner. (estate sale treasure- $2.00) okay, so my I write how I talk and I know it needs improvement but it will come. Let it be.
