Crab Quiche

 
 
Easy Weeknight Dinner  
 
 
                                                          What you will need
  • 8 eggs
  • 2 cups half & half
  • 1 cup shredded swiss cheese
  • 1 cup shredded cheddar cheese
  • 8 0z of imitation crab meat
  • 1/2  cup green onions chopped
  • 1 large red pepper chopped
  • 1  cups plain bread crumbs
  • 1 t. salt
  • 1/2 t. pepper

  • Preheat oven to 350*.
  • Spray 9 x 13 inch pan with non-stick spray.
  • Whip eggs, half & half and salt & pepper.
  • Add crab meat, bread crumbs, onion & pepper.

  • Fold in cheese and pour into casserole. 



  • Bake for 30-35 mins. (until knife inserted comes out clean.)
  • Allow to sit for 10 mins. before serving.

      Serve with a side salad and a glass of sauvignon blanc.

GOW

Life is a Cabernet Old Friend


If you appreciate wine as much as I do, I know you will love this red blend I found for a great every day wine!!  I don't know about you but at the end of  the day a glass of wine is just the right remedy for a calm evening. My friends and I  love a little self therapy over  what we call a  GOW ??  (glass of wine).  What time and where... Usually by 3:00 or 3:30 someone is texting  GOW?? The answer is  always yes.  We all take turns hosting our therapy sessions and as any wine connoisseur can attest too it can get expensive.   I was shopping at Sam's Club last month and found this wonderful red blend.  Wait for it ...$6.00!!  Who can beat that!! It is smooth but ends with a faint peppery taste.   Perfect with a bowl of chips.  (another must have at therapy)  So the next time you need a self -help session to realize you are not alone in this crazy world we call life... Review:
1. I have really sensitive eyes and when it comes to buying mascara I have to be really careful. Covergirl Lash Blast has been a staple in my makeup bag for as long as I can remember. Until now. L'Oreal Voluminous Million Lashes is amazing. It doesn't hurt my eyes and it makes me look like I have a MILLION lashes!
2. There really are no words for this eyeshadow pallet except for every girl should own one. There are so many looks you can create and the shadows are smooth, blendable, and last for a long time. Plus you get a primer potion and an eyeshadow brush. DEAL
3. I am obsessed with anything matte right now. This finisher is AWESOME. You can turn any nail polish in your collection to matte with this one product. Matte nail polishes are usually harder to come by and this is the answer. It is kind of hard to find though.
4. I just started using a highlighter in my makeup routine.  I have been looking for a good product for a while. I think I may have found it  in theBalms Mary-Lou Manizer. It is just the perfect color highlight for my skin tone. It also works great for an eyeshadow.
5. Daisy, Daisy, Daisy. If you haven't smelt this perfume by Marc Jacobs, go smell it.

Salsa in a heartbeat!!



I have been making this salsa for 15 years. It is my go to recipe for any party I attend.  Whenever I ask  what I can bring the answer is always the same!! BRING YOUR SALSA!! No problem. I make it so often I can whip it up in 10 minutes.  It's a total of 7 ingredients and a cinch to make.  So here it is, my famous recipe for salsa.  NO SECRETS here.




                                                       7 simple ingredients

28 oz can of whole peeled tomatoes
11 oz can of mexican corn (regular corn is fine too)
4 oz can of diced green chile's
1 package of taco seasoning
1 bunch of green onions
fresh cilantro
jalapeno slices



Easy prep

Drain corn and pour into food processor. (I use the bullet, it works great for this recipe)
Add green onions (the whole bunch)  and cilantro  (I use about 1/4 of a cup)
Process on high until smooth.


Drain tomatoes and pour into a blender.
Add green chile's, taco seasoning & jalapenos. (about 1/8 of a cup)
Add corn mixture and blend on high.


Sample, add more jalapenos and salt to taste!!


Happy Hour now begins!!

Serve with margaritas and everyone's  happy !!

P.S. This recipe makes about 5 cups, not sure how long this will last in the frig.  I never have any left over.  I am sure it can be kept for a few days at least.

Fall Must Have: Aztec Sweaters


Aztec Sweaters
 One of my obsessions this fall is anything Aztec. I love the bold print and on a sweater it is even more brilliant. Here are a few I found that are fantastic!
 This sweater can be purchased online at vonmaur.com. The original price of this sweat was $168.00 but has been marked down to $112.00! It is definatly more on the expensive side but I think it is so worth it!

This sweater is from forever21.com and it is only $24.00! A cheaper alternative but still very cute!!

Pair it:
These sweaters are so easy to style. Pair them with some skinny jeans, boots and you are good to go to dinner or just hangout by a fire!!

My Take:
I found my perfect aztec sweater last weekend at [drumroll........] TJMaxx! Yes, it was love at first sight and it was only $39.00!

Recipes Tried & True: Loaded Baked Potato Dip

Loaded Baked Potato Dip
Original Recipe from Kraft with a few modifications!!!



Every thing you need for this delicious appetizer or side dish:
     1 cup instant potatoe flakes
     1 cup milk
     8 oz creme cheese (I use fat free)
     16 oz sour cream ( I use fat free)
     8 oz bag of shredded cheese ( I use colby jack)
     2.8 oz bag of real bacon bits
     1 package of hidden valley ranch dip or dressing mix  (3 tbsp)
     4 green onions
     1 bag of Ritz toasted chip crackers (original)



Easy Prep:  Preheat oven to 350*
  •      Mix potatoe flakes with milk in large bowl, let stand for 5 min
  •      Chop green onions while waiting.       
  •      Combine sourcream with ranch dip mix.  Blend well.
  •      Add softened cream cheese and sourcream to potatoes.


  •      Stir in shredded cheese, bacon bits and green onions (saving a little of each )
  •      Spoon into large casserole dish or two  9" pie plates. (I spray mine with pam)
 

     I always make two, one for my family and one for my mom & dad!!
     Everybody LOVES this!!

  •      Top with remaining cheese, bacon bits & green onions.  
  •      Bake 15-20 min. until cheese is melted and warmed through. 
  •      Serve with crackers as an appetizer and it also makes a great side dish!!
